I forgot which one does which...but your aperture is small enough to get all the bee into focus. I would say single shot AF is good.

To freeze a motion, you would probably have to take into account the motion speed (not just flapping frequency), and object size.
You probably would have a better chance if those wings were flapping at their ends (where they change direction). Otherwise, the speed probably would still be too high to capture. From what I see, these are bumble bees, which probably flaps more frequently because of their sizes. Hope you are satified with the nerdy reply =)
